The Umayyad dessert is essentially a pastry made with honey or sugar syrup, containing a little rose water and dates. They also used milk, honey and rice puddings. Modern desserts mainly contain nuts and are very sweet. Tunisians eat baklava, sweet samosa, date cakes and nut cream.
Among the fruits, peaches, grapes, melons, apricots and pomegranates are prized in Tunisia.
Coffee is prepared in Tunisian cafes, especially Turkish coffee, to which orange blossom or rose water is added, espresso, coffee with milk and cappuccino are also drunk. In addition to coffee, Maghreb mint tea, cedar or almond tea, lemon or orange tea are extremely popular lemonades, as well as "le de poul" (a milkshake made from egg whites).
Although the majority of the population professes Islam, which prohibits the consumption of alcoholic beverages, many types of alcohol are sold in Tunisia: beer, fig vodka "bukha", whiskey, aniseed liqueur pastis, date liqueur tibarine and palm juice.
