What currency should I use in Sharjah?

Money in Sharjah, as in all of the UAE, is called dirhams (AED). The dirham exchange rate is strictly pegged to the US dollar and does not change for months and even years: 1 dollar = 3.67 dirhams. Therefore, in the UAE it is better to take dollars with you; there will be no problems with exchanging them on the spot.
As for euros, they can also be exchanged for dirhams, but the exchange rate of the European currency plays a stronger role. You can also find exchangers that accept Russian rubles, but this is not at all profitable, since you can lose up to 30% of your money on the exchange.
As for the ruble, now (March 2023) the official exchange rate for the dirham is 1 dirham = approximately 20 rubles.
In addition, some Russian banks have started selling cash dirhams. For example, in Moscow, UAE currency can now be purchased at five Sberbank branches. Sber sells dirhams for 22 rubles.
