Tapas is considered the most famous dish of the city; in almost all restaurants in the city you can try this dish, which literally translates from Spanish as valve (the name was given because in the past tapas were served in a valve with drinks). Delicious local cuisine is prepared mainly from seafood on the grill or over a fire. Some of the delicious dishes include squid, chocho, swordfish, marinated shark, grilled meat, spinach with chicken wings, jamon Iberico, puchero and gazpacho. The Seranito sandwich is a typical example of fast food.
Typical desserts of Seville are pestiños, honey cakes called torrijas, roscos fritos, slices of bread baked with honey, magdalenas or yemas de San Leandro, well-made sugar cookies made by the monasteries of the city and the only source of income, and tortas de aceite - cookies from sugar and olive oil. Polvorones and mantecados are traditional birthday desserts, while pesitinos and torrijas are prepared during Holy Week.
Seville's Darnaham oranges grow on trees planted along the city streets. In the past, large quantities of oranges were exported to Britain, where they were used to make marmalade. Currently, the fruits are used for local needs. According to tradition, bitter oranges were brought to the city by Arabs from East Asia to decorate their gardens.
