Armenian cuisine, Ghapama


Ghapama is an Armenian dish made from stuffed pumpkin. According to national traditions, a bowl was served at the wedding table as a symbol of abundance.
Ghapama is prepared by removing the pumpkin pulp. The top of the pumpkin is cut off and set aside as a lid, and the pumpkin itself is used as a pot. The pumpkin seeds are removed with a spoon. The pumpkin is stuffed with steamed rice, fresh fruit, sweet and sour nuts and chopped nuts. You can add honey or sugar and season with cinnamon.
Grease the inside of the pumpkin with butter and pour the butter over the filling, adding butter on top. The filling is not filled to the brim, as it increases in volume during cooking. The pumpkin head is covered with a cut off lid and placed in the oven.
